After graduating from the renowned French Culinary Institute in New York City, Kimbal Musk moved to Boulder, Colorado and co-founded "The Kitchen", a restaurant characterized for its 'communal tables' and for being 'kid friendly'. In this talk, Kimbal describes how America's food culture has changed in the last couple of decades, and over-processed food has contributed to an spiral cycle of obesity throughout the country. He encourages his fellow restaurateurs to re-define the role of restaurants, as a place where people can connect again with each other and their communities, and children can have fun and enjoy eating healthy and real food.
