I love mushrooms, in all forms and shapes. A very common ingredient in Chinese cuisine, so yes, you can imagine that I grew up eating it. But I had no idea how they were grown until I watched and researched more about the fascinating world of mushrooms before I could subtitle this video.

After graduating from the renowned French Culinary Institute in New York City, Kimbal Musk moved to Boulder, Colorado and co-founded "The Kitchen", a restaurant characterized for its 'communal tables' and for being 'kid friendly'. In this talk, Kimbal describes how America's food culture has changed in the last couple of decades, and over-processed food has contributed to an spiral cycle of obesity throughout the country. He encourages his fellow restaurateurs to re-define the role of restaurants, as a place where people can connect again with each other and their communities, and children can have fun and enjoy eating healthy and real food.
Después de graduarse en el conocido Instituto Culinario Francés en Nueva York, Kimbal Musk se mudó a Boulder, Colorado. Fue el co-fundador de "The Kitchen", un restaurante que se caracteriza por sus "mesas comunitarias" y por estar orientado también a los niños. En esta charla, KImal describe cómo ha cambiado la cultura de comida estadounidense en las dos últimas décadas y cómo la comida sobreprocesada ha contribuido a la espiral de obesidad a lo largo de todo el país.
