Ethan Kay: Saving Lives through Clean Cookstoves / Salvando vidas por medio de estufas eficientes (TEDxMontreal, 2012)

This was one of the first TEDxTalks that I translated to Spanish. I learned so much with this talk about clean cookstoves and the health risks that many people face around the world when they cook with an open fire. When I visited Bangladesh for the first time, we went to a village and I noticed how they were drying cow manure to use as fuel for cooking. Some of the people that were with me asked me if I knew what they were doing and, probably to their surprise, I said yes and I told them what I had learned about cooking with an open fire after working with this TEDx talk!


Esta fue una de las primeras charlas TEDx que traduje al español. Aprendí muchísimo con esta charla acerca de las estufas eficientes y los riesgos para la salud a la que se expone mucha gente en todo el mundo al cocinar a fuego abierto. Cuando visité Bangladesh la primera vez, fuimos a una aldea y noté que secaban el estiércol de la vaca para ser usado como combustible para la cocina. Algunas de las personas con las que estaba me preguntaron si sabía lo que estaban haciendo y, posiblemente para su sorpresa, les dije que sí y les conté sobre lo que aprendí acerca de cocinar a fuego abierto. ¡Todo gracias al trabajo con esta charla de TEDx!

I love mushrooms, in all forms and shapes. A very common ingredient in Chinese cuisine, so yes, you can imagine that I grew up eating it. But I had no idea how they were grown until I watched and researched more about the fascinating world of mushrooms before I could subtitle this video.

Kimbal Musk: Reinventing The Role Of Restaurants In Changing America's Food Culture / Reinventando el papel de los restaurantes para cambiar la cultura culinaria en EE. UU. (TEDxBoulder, 2011)

After graduating from the renowned French Culinary Institute in New York City, Kimbal Musk moved to Boulder, Colorado and co-founded "The Kitchen", a restaurant characterized for its 'communal tables' and for being 'kid friendly'. In this talk, Kimbal describes how America's food culture has changed in the last couple of decades, and over-processed food has contributed to an spiral cycle of obesity throughout the country. He encourages his fellow restaurateurs to re-define the role of restaurants, as a place where people can connect again with each other and their communities, and children can have fun and enjoy eating healthy and real food.

Fue el co-fundador de "The Kitchen", un restaurante que se caracteriza por sus "mesas comunitarias" y por estar orientado también a los niños. Alberto Song: El productor y su granito de café / The grower and his coffee bean (TEDxTijuana, 2012)

This was also one of the first TEDxTalks I worked with that opened up my curiosity and my passion for coffee and coffee beans. I went back to watch it recently, and I realized that many of the things I learned from this talk informed a lot of my decisions about coffee today. 

Coffee is so present in our daily lives that we take it for granted. Coming from a coffee producer country, we didn't discuss which coffee wasn't good, but which one was better. It took me a while to find a coffee that I like when I left my country and, to be honest, I'm still on the quest.

I know it's late to talk about mooncakes this time of the year, but browsing on the web, I found this very beautiful short video about making mooncakes by hand, spoken in Cantonese (always soothing to hear your mother tongue), and the story touched my heart.

I found it with English subtitles (thanks go to the video producer for thinking in subtitles) and I added the Spanish subtitles, especially thinking in my Chinese-Venezuelan cousins, nephews, nieces, and Spanish speaking friends interested in our Chinese traditions.

Sé que es tarde para hablar de los pasteles de luna en esta época del año, pero viendo vídeos en la red conseguí este hermoso corto sobre la elaboración manual de los pasteles de luna, hablado en cantonés (escuchar tu lengua materna siempre te toca), y la historia me llegó al alma.

Ya tenía subtítulos en inglés (gracias al productor del video por pensar en los subtítulos) y le puse los subtítulos en español, especialmente pensando en mis primos y sobrinos chinos-venezolanos, y mis amigos hispanoparlantes interesados en nuestras tradiciones chinas.

I found this awesome short reportage from VICE News on Facebook (already with English subtitles) and I thoughts it was worth sharing.
I loved the content because it shows beautiful graffitis of iconic Italian ingredients and dishes over what was previously a hateful message. But I also love that thanks to the power of subtitles I can access to content in other languages.

SPAGUETTI AL LIMONE RECIPE / LA RECETA DEL ESPAGUETI AL LIMÓN

Spaghetti al Limone Recipe

400 g linguine
150 g butter
250 g double cream (heavy cream in the US)
1 lemon
1 small dried chili, minced
cloves garlic, minced
1 small bunch parsley, leaves chopped
1/2 cup of grated parmesan

1. Bring a pot of salted water to a boil (the pot should be large enough to cook the linguine).
2. Grate the zest of 1 large lemon directly into the double cream. Then fold in the fresh juice of half that lemon.
3. To a large skillet set over medium-low heat, add the butter, garlic, chili, and half the parsley. Stir until the butter is melted and everything is coated with it.
4. Before the garlic starts to color, add the lemon cream and slowly stir until it’s combined with the butter.
5. Add 1/4 cup of parmesan and stir to combine. Remove the sauce from the flame and set aside. Don’t worry if it begins to separate; it will come back together when we stir it again later.
6. Add the linguine to the boiling water, and cook for 4 minutes less than the package recommends.
7 Drain the linguine, reserving a couple cups of the hot cooking water. Add the linguine to the sauce and carefully toss to the coat each strand.
8. Add a ladle-full of cooking water until it is absorbed by the pasta. Keeping adding water until the linguine is finished cooking - it should be al dente, not mushy.
9. Add the remaining parmesan and parsley. Serve immediately.

Receta para el espagueti al limón

400 g de linguine
150 g de mantequilla
250 g de crema espesa
1 limón
1 pimiento seco pequeño, picadito
2 dientes de ajo, picadito
1 manojo de perejil, con las hojas picaditas
1/2 taza de queso parmesano rallado

1. Hierve una olla de agua con sal (la olla debería ser lo suficientemente grande como para cocer el linguini)
2. Ralla la cáscara de 1 limón grande directamente sobre la crema espesa. Agrega el jugo de medio limón y revuelve.
3. En un sartén grande sobre fuego medio bajo, agrega la mantequilla, el ajo, el pimiento y la mitad de las hojas de perejil. Revuelve hasta que la mantequilla esté derretida completamente y mezclada con los otros ingredientes.
4. Antes que el ajo comience a cambiar de color, agrega la crema con el jugo de limón y mezcla lentamente hasta que esté todo fundido con la mantequilla.
5. Agrega 1/4 de taza de queso parmesano y revuélvelo hasta que esté todo mezclado. Retira la salsa del fuego y déjala a un lado. No te preocupes si los ingredientes comienzan a separarse; volverán a juntarse cuando lo revuelvas.
6. Agrega el linguini al agua en ebullición y cocínalo por 4 minutos menos que lo que te recomiendan las instrucciones en el paquete.
7. Escurre el linguine y reserva unas cuantas tazas del agua. Agrega el linguini a la salsa y sacúdelo cuidadosamente hasta que la salsa se adhiera a la pasta.
8. Agrégale un cucharón de agua de pasta hasta que el linguini la absorba. Continúa agregando agua hasta que el linguini esté completamente cocido. Debe quedar al dente, no blando.
9. Agrega los restos del queso parmesano y el perejil. Sirve de inmediato.

In less developed countries, there are 3 billion people using fire and charcoal to cook their meals and heat their homes, creating health and environmental issues. According to the World Health Organization, over 4 million people die prematurely every year from household cooking smoke. That is double the number of people who die each year from HIV/AIDS. This isn’t just happening in rural villages in Africa or India. It’s happening right here in our backyards; 2 hours from Miami, in Haiti.

When I finished the course: "Food: a Cultural Culinary History" by Prof. Ken Albala, I learned so many things about food and its role in civilization that I started to see food with a different perspective.

Working with this talk really touched me and brought me fond memories of my childhood. Before I left my parents' house to go to university, I don't recall us not having lunch or at least dinner together as a family. Those were the times to share the events of the day from school or from work, talk about the latest news, discuss important family decisions and many more. Now that I have my own family (my husband) and I live in a new my adoptive country, sitting down at the table to have a meal at least once a day, away from our computers, phones, TV and busy lives, it's a blessed time. We might not always have a lot of important things to discuss, but just the company and being in the moment to enjoy our food and each other is what reminds me daily that, no matter how hectic or difficult life might be at that moment, there's always time for family.

Trabajar con esta charla realmente me conmovió y me trajo hermosos recuerdos de mi niñez. Antes de dejar la casa de mis padres para ir a la universidad, no recuerdo ninguna vez que no hayamos almorzado o al menos cenado en familia. Esos eran los momentos para compartir los eventos del día en la escuela o en el trabajo, conversar sobre las últimas noticias, hablar sobre importantes decisiones familiares y mucho más. Ahora que tengo mi propia familia (mi esposo) y que vivo en mi nuevo país adoptivo, sentarnos a la mesa a comer por lo menos una vez al día, sin nuestras computadoras, teléfonos, TV y vida agitada, es una bendición. Quizá no siempre tengamos cosas importantes de qué hablar pero la compañía y estar en el momento, juntos y disfrutando de nuestra comida es lo que me recuerda a diario que sin importar qué ocupados estemos o por cuántas dificultades estemos pasando, siempre hay tiempo para compartir en familia.

I recently talked about a documentary film, "Peru knows: Cooking as a Social Weapon of Change", that illustrates the work that Peruvian chefs are doing by coming together and working toward the common goal of promoting Peruvian cuisine around the world. So, I was thrilled to have the opportunity to translate this TED talk by one of the chef that was part of this movement.

Another beautiful TEDxTalks that I had the opportunity to help create English and Spanish subtitles. It's so timeless -- the idea of food as a connector, of cuisine as a source of identity but also a way of understanding when communities come together for a common goal, despite their differences.




Otra hermosa charla the TEDx que tuve la oportunidad de subtitular al inglés y al español. I was very happy to see one of my favorite cooking personalities gave a TED Talk this year. I've been admiring the social work of Spaniard chef José Andrés when I had the opportunity to subtitle one of his earliest TEDxTalks to English and Spanish. His recent work, as he describes it in this TED Talk after Hurricane María hit the island of Puerto Rico causing massive destruction, shows that you can always make a difference if your heart is in the right place and you have the willingness to help, no how many resources you might or might not have. Here's the TEDxTalk that introduced me to chef José Andrés and his work to help make a difference in the world.

Comencé a sentir una gran admiración por el trabajo social del chef español José Andrés cuando tuve la oportunidad de subtitular una de sus primeras charlas TEDx al inglés y al español.
